Estabilización tartárica de vinos tintos de Navarra por resinas de intercambio catiónico. Análisis físico–químico y organoléptico.

Resumen
Este trabajo estudia la calidad de vinos sometidos a procesos de estabilización tartárica por resinas de intercambio catiónico. Se han tratado vinos de Tempranillo y Garnacha y se han efectuado diferentes mezclas con los vinos de partida y con vinos diferentes, para ver la respuesta a los tratamientos. El objetivo es determinar la fracción mínima de vino a tratar necesaria para estabilizar el vino de partida. Para ello se realizaron cuatro tratamientos: mezcla de vino Tempranillo tratado con testigo, mezcla de vino Garnacha tratado con testigo, mezcla de vino Tempranillo tratado con vino joven y mezcla de vino Tempranillo tratado con vino crianza. Tras el ensayo se analizó la estabilidad de los vinos y se vio que la fracción mínima ideal de vino tratado en la mezcla dependía del tipo de vino. Los resultados de la cata mostraron que no existen diferencias significativas entre el vino testigo y las distintas mezclas, a excepción del tratamiento de vino Garnacha para las mezclas con una proporción de vino tratado superior al 30%.

Abstract
Tartaric stabilization of Navarra red wines by Cation Exchange Resins. Physicochemical and organoleptic analysis. This article studies the quality of wines treated by processes of tartaric stabilization with the technique of Cation Exchange Resins. The wines treated are wines of Tempranillo and Garnacha, and after the treatment, these wines have been mixed with the initial wine and with others to see the response to the treatment. The aim is to establish the minimum fraction of treated wine necessary to stabilize the initial wine. To achieve this aim, four treatments were done: mixture between treatment Tempranillo with control Tempranillo, mixture between treatment Garnacha with control Garnacha, mixture between treatment Tempranillo with young wine and mixture between treatment Tempranillo with crianza wine. After the research, the control wines were stabilized and it was tested that the ideal minimum fraction of treated wine in the mixture, it was different according to the control wine. The results of the organoleptic analysis sowed that there are not differences between the control wine and the difference mixtures, apart from the treatment of Garnacha wine, to the mixtures with treated wine proportion bigger than 30%.
