Un punto clave del éxito de la crianza en barricas: el concepto de integración madera/vino

Resumen
El objeto de este artículo es ilustrar y demostrar la existencia de reacciones químicas que participan en la integración de la madera en el vino y mostrar las nuevas estructuras químicas que integran compuestos del vino y de la madera en una misma sustancia híbrida.

Abstract
A key point of the success of wine ageing: The wood/wine integration concept. The aim of this paper is to illustrate and to demonstrate the existence of chemical reactions that participate in the integration of the wood in the wine. The new chemical structures that contain both the wine compounds and the wood in a same hybrid substance are also showed.
